Been thinkin' bout peaches lately haha.
Well I came across some recipes and thought I'd post them for all to try.
After all, who doesn't like peach cobbler in the summertime!

Easy Peach Cobbler
1/2 c. unsalted butter
1 c. all-purpose flour
2 c. sugar, divided
1 TBS baking powder
Pinch of salt
1 c. milk
4 c. fresh peach slices
1 TBS. lemon juice
ground cinnamon, brown sugar or nutmeg (optional)
Melt butter in 9 x 13" baking dish
Combine flour, 1 c. sugar, baking powder, and salt; add milk, stirring just until dry ingredients are moistened. Pour batter over butter (Do Not Stir)
Bring remaining 1 c. sugar, peach slices and lemon juice to a boil over high heat, stirring constantly, Pour over batter (Do Not Stir)
Sprinkle with cinnamon and brown sugar, if desired.
Bake at 375 F for 40 to 45 minutes or until golden brown.
Serve cobbler warm or cool
Peach Muffins
3 c. all purpose flour
1 TBS ground cinnamon
1 tsp baking soda
1 tsp salt
1 1/4 c. vegetable oil
3 eggs, lightly beaten
2 c. white sugar
2 c. peeled, pitted and chopped peaches
Preheat oven to 400 F
Line muffin cups with cupcake liners (or grease, whichever you prefer)
Mix the flour, cinnamon and baking soda, and salt in a bowl.
In another bowl, mix the oil, eggs and sugar.
Mix the dry and liquid mixtures together just until moist.
(Please don't over mix quickbreads. It makes them chewy. You'll be sad)
Fold in the peaches.
Spoon into muffin cups
Bake 25 minutes
Peach Cream Cheese
1- 8oz pkg cream cheese, room temperature
One peach, chopped
Zest of half a lemon
2 TBS honey or to taste
Combine until smooth in a food processor, scraping down when necessary.
Chill

Granny's Peach Pie
1 baked 9-inch pie shell
5-6 large peaches
1 c. sugar
2 TBS cornstarch
1/2 tsp vanilla
2 TBS butter
Slice the 3-4 large peaches into baked pie shell.
In a blender, slightly blend the other 2 peaches, sugar, cornstarch and water.
Pour mixture into a saucepan. Cook over medium heat until it begins to boil, whisking constantly. Let boil until thick and clear (about 1 minute)
Remove from heat, add vanilla and butter.
Pour over peaches in pie shell and chill for several hours until set.
Serve with whipping cream or ice cream.

you so just made me hungry for peaches. I think I'm going to try your peach cobbler receipe for our dessert night at the family reunion. Thanks for sharing.
Oooo so yummy. Dawn was just here a few weeks ago and we made lots and lots of peach jam. Then with the leftovers I made peach pies & peach salsa & have just loved them all! As soon as I start eating fresh ripe peaches, I know fall is just around the corner and it makes me sooo happy :) Thanks for the recipes.
